Semi-mature sheep’s milk cheese
Compact-texture cheese produced in Sardinia from accurately selected whole sheep’s milk, from flocks that roam the pristine green pastures of the island of Sardinia. Cylindrical wheel, with flat faces and straight sides. Straw-coloured interior, compact and hard texture, with a few eyes. Aromatic and intense taste. Delicate aroma. Smooth rind with yellow coating.
Sheep’s milk, calf rennet, salt, lactic starter.
Minimum 60 days.
Diameter: 14-16 cm. Height: 8 cm. Average weight: 1.4-1.8 kg.
