Sheep’s milk “caciotta” cheese
Fresh soft table cheese produced in Sardinia from accurately selected whole sheep’s milk, from flocks that roam the pristine green pastures of the island of Sardinia. Cylindrical, flat-faced, with rounded sides. Creamy white and soft interior, with sparse eyes. Mild and delicate taste, intense aroma of fresh milk. Rind tending to straw-yellow, with white-transparent, brown or black coating.
Sheep’s milk, calf rennet, salt, lactic starter.
Minimum 15/20 days.
Diameter: 14-16 cm. Height: 8-9 cm. Average weight: 1.7-2.4 kg.
